KAIYŌ Restaurant is the foundation of our Nikkei journey. Located on the first floor at the Hyatt Place in San Francisco, the Restaurant offers a full-service dining experience that explores the rich intersection of Japanese technique and Peruvian flavor.
From the moment you enter, vibrant Peruvian colors and textiles welcome you into the space. As you move toward the sushi counter, Japanese influence takes center stage, where guests can watch our chefs craft Nikkei rolls, hand rolls, sashimi, and nigiri with precision and care.
Our dinner menu is designed for those seeking a complete culinary experience. Alongside fresh ceviche and sashimi, you’ll find signature entrées like Lomo Saltado, Pulpo Parrillero, and Churrasco Bone-In Ribeye — dishes that showcase bold regional ingredients and refined technique.
The cocktail program, led by Danny Louie (2025 James Beard Outstanding Professional in Cocktails semifinalist), highlights the depth and versatility of Peruvian Pisco and Japanese whisky, layered with unexpected spices, herbs, and fruits. Each drink is crafted to complement the flavors of the kitchen and elevate the dining experience.
